Avocado and Tomato Pasta

Ingredients

Avocado Sauce:

  • 2 large avocados ripe
  • 3.5 oz cream cheese
  • 1 tbsp lemon juice freshly squeezed
  • 1 garlic clove
  • salt, black pepper
  • cup cherry tomatoes
  • fresh basil leaves optional

Serve with:

  • 8 oz. pasta

Instructions

  • Cook pasta as per package instructions.
  • Meanwhile, carefully scoop out the avocado flesh. Combine with the lemon juice, cream cheese, and garlic clove, and purée everything into a creamy mixture. Season to taste with salt and pepper.
  • Combine the avocado sauce with the pasta and serve garnished with halved cherry tomatoes.

Notes

The recipe yields approximately 3 servings. Using the sauce sparingly (more like a pesto and less like a thicker sauce), you will have enough for 4 helpings. ;)
