Cucumber Avocado Salad with Feta Cheese and Walnuts
Simple, yet super tasty cucumber salad with avocado, feta cheese, and walnuts.

Ingredients

English seedless cucumber

large avocado

feta cheese
▢
fresh parsley
▢
scallions/green onions

walnuts

freshly squeezed lemon juice

salt, black pepper
Instructions
Cut cucumber and avocado into small, bite-sized pieces.
Crumble feta cheese by hand and roughly chop walnuts.
Finely chop fresh parsley and scallions.
Combine all ingredients in a bowl and drizzle with lemon juice and olive oil. Season generously with salt and black pepper and incorporate well.
