Cucumber Avocado Salad with Feta Cheese and Walnuts

Simple, yet super tasty cucumber salad with avocado, feta cheese, and walnuts.

Ingredients

  • 1 English seedless cucumber
  • 1 large avocado
  • 4 oz feta cheese
  • fresh parsley
  • scallions/green onions
  • ¼ cup walnuts
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • salt, black pepper

Instructions

  • Cut cucumber and avocado into small, bite-sized pieces.
  • Crumble feta cheese by hand and roughly chop walnuts.
  • Finely chop fresh parsley and scallions.
  • Combine all ingredients in a bowl and drizzle with lemon juice and olive oil. Season generously with salt and black pepper and incorporate well.

Notes

The above recipe yields approximately four smaller side servings.
