Egg Salad with Cottage Cheese

Ingredients

  • 6 hard-boiled eggs
  • ½ bunch of scallions
  • 7 oz cottage cheese
  • 1 tsp Dijon mustard
  • ½ tsp honey
  • salt, black pepper

Instructions

  • Peel your hard-boiled eggs and chop them into small pieces, then slice scallions into rings.
  • In a bowl, combine cottage cheese, mustard, and honey, then whisk until smooth. Liberally season with salt and pepper.

Notes

Depending on the texture you prefer, feel free to chop the eggs into bigger or smaller bits.
