Healthy Avocado Egg salad (no mayo!)
An incredible avocado egg salad without mayo - delicious and creamy; perfect for bread spreads or dips.

Ingredients

large ripe avocados
▢
½
cup
Greek Yogurt
▢

tsp
Dijon mustard

hard-boiled eggs
▢
scallions or chives
▢
salt, black pepper
Instructions
Mash avocado with a fork and combine well with Greek yogurt and mustard.
Roughly mash 2 eggs with a fork and fold into avocado cream.
Chop up remaining 4 eggs and add to the mix.
Slice scallions or chives into small rings and incorporate them as well.
Thoroughly season to taste with salt and black pepper.
Notes
If you would like to preserve your dip for an extended period, you may mix in a little bit of freshly squeezed lemon juice.
