Healthy Avocado Egg salad (no mayo!)

An incredible avocado egg salad without mayo - delicious and creamy; perfect for bread spreads or dips.

Ingredients

  • 2 large ripe avocados
  • ½ cup Greek Yogurt
  • 1 tsp Dijon mustard
  • 6 hard-boiled eggs
  • scallions or chives
  • salt, black pepper

Instructions

  • Mash avocado with a fork and combine well with Greek yogurt and mustard.
  • Roughly mash 2 eggs with a fork and fold into avocado cream.
  • Chop up remaining 4 eggs and add to the mix.
  • Slice scallions or chives into small rings and incorporate them as well.
  • Thoroughly season to taste with salt and black pepper.

Notes

If you would like to preserve your dip for an extended period, you may mix in a little bit of freshly squeezed lemon juice.
