Healthy Carrot Cake Bites

Healthy energy balls with oats, apricots (no dates), and grated carrots.

Equipment

  • Food processor

Ingredients

  • 3.5 oz soft-dried apricots unsweetened
  • 1 cup oats
  • ½ cup almond flour natural
  • 1 ½ tbsp almond butter blanched, smooth, unsweetened
  • pinch of salt
  • cinnamon
  • ¼ cup grated carrots
  • water
  • coconut flakes for coating unsweetened

Instructions

  • Toss all ingredients, except water and carrots, into a food processor and process until evenly combined.
  • Finely grate the carrots and thoroughly incorporate by hand into the above mixture. Bit by bit, add in your water until the “dough” is uniformly smooth.
  • Shape into small balls and roll each bite in shredded coconut flakes.

Notes

Refrigerate the energy balls for several hours before enjoying them!
