Kohlrabi and Apple Salad with Walnuts

Crunchy and refreshing raw kohlrabi salad with apples and walnuts.

Ingredients

Salad

  • 1 kohlrabi
  • 1 small apple
  • scallions/spring onions
  • ¼ cup walnuts
  • salt, black pepper

Dressing

  • 1 ½ tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • 2 tbsp water
  • ½ tsp honey

Instructions

  • Peel and roughly grate the kohlrabi.
  • Coarsely shred the apple as well.
  • Cut up spring onions into small rings or chunks. Roughly chop or crumble your walnuts.
  • Combine all ingredients in a bowl and season with salt and black pepper.
  • To create dressing, whisk remaining ingredients together and drizzle over the salad. Incorporate well.

Notes

For best-tasting results, make sure to let your salad rest for a while to allow all flavors to fully disperse. Enjoy your next slam-dunk recipe!
