½orangefreshly squeezed juice thereof
1tspwhite balsamic vinegar
1tsphoney
pepper
1small apple
scallions/green onions
6-7ozfeta cheese
1/3cupwalnuts
Instructions
Cut the cabbage in half, then quarter each half. Remove the root by cutting it out diagonally. Thinly slice the cabbage, sprinkle with 1 tsp of salt, and thoroughly knead the slaw by hand until it starts releasing liquids and has become noticeably softer.
Pour orange juice, olive oil, vinegar, and honey over cabbage, season well with black pepper, and continue to incorporate well. Let rest for approximately 20 minutes.
Chop apple into small pieces. Cut scallions into small rings. Roughly crumble the feta cheese and walnuts by hand.
Add all ingredients to bowl with red cabbage, mix well, and season to taste once more.
Notes
I highly recommend using protective kitchen gloves, as red cabbage tends to heavily stain.
