Red Cabbage Salad with Feta Cheese

Flavorsome raw salad made with red cabbage, feta cheese, walnuts, and apples.

Ingredients

  • 1 small head of red cabbage gross weight approx. 750 g
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ orange freshly squeezed juice thereof
  • 1 tsp white balsamic vinegar
  • 1 tsp honey
  • pepper
  • 1 small apple
  • scallions/green onions
  • 6-7 oz feta cheese
  • 1/3 cup walnuts

Instructions

  • Cut the cabbage in half, then quarter each half. Remove the root by cutting it out diagonally. Thinly slice the cabbage, sprinkle with 1 tsp of salt, and thoroughly knead the slaw by hand until it starts releasing liquids and has become noticeably softer.
  • Pour orange juice, olive oil, vinegar, and honey over cabbage, season well with black pepper, and continue to incorporate well. Let rest for approximately 20 minutes.
  • Chop apple into small pieces. Cut scallions into small rings. Roughly crumble the feta cheese and walnuts by hand.
  • Add all ingredients to bowl with red cabbage, mix well, and season to taste once more.

Notes

I highly recommend using protective kitchen gloves, as red cabbage tends to heavily stain.
