Watermelon Feta Arugula Salad with Walnuts

Wonderfully refreshing summer salad with watermelon, feta or goat cheese, arugula, and walnuts.

Ingredients

Salad

  • 3 1/3 cups watermelon
  • 6-7 oz feta cheese
  • 2 oz arugula
  • ¼ cup walnuts

Dressing

  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp olive oil
  • ½ tsp honey
  • salt, black pepper
  • 2 tbsp water

Instructions

  • Remove watermelon rind and cut its flesh into small, bite-sized cubes.
  • Continue to cut the feta cheese into similarly sized chunks (as watermelon).
  • Pluck arugula into smaller pieces and roughly chop up the walnuts.
  • Create dressing with remaining ingredients.
  • Combine all ingredients in a bowl and incorporate well.
