Ingredients

Only a few simple everyday ingredients are required to prepare the arugula strawberry feta salad:

  • Lettuce: Use any leafy greens of your choice. A pre-packed spring mix (salad blend) would also taste particularly delicious.
  • Arugula: Select produce that is as fresh and crisp-looking as possible; no bruising or yellow bits. With its light but pleasant pungency, arugula complements our recipe’s other flavor notes beautifully.
  • Strawberries: As with the arugula above, the same rule applies.Ensure that the strawberries you pick are fresh and not bruised.
  • Feta Cheese: Either feta cheese, goat cheese, or something similar. Whichever you prefer.
  • Walnuts: Chopped walnuts are the way to go here. Eliminate the need to process whole walnuts further. 😉

Served with a super simple yet mighty delicious vinegar-oil dressing, et violà…done! Easy enough, right? No elbow grease required here. 😉

Recipe Tips

Although the strawberry arugula salad with feta is extremely easy in terms of preparation, here are a few additional tips for you to lean on:

  • I would strongly encourage tearing your lettuce (arugula included) into bite-sized pieces for easier consumption. You’ll thank me later. 😉
  • The salad is best enjoyed freshly made. Preparing the salad ahead of time for meal prep is not recommended. Itll turn to mush pretty quickly, lose its crunch, and just wont taste as good anymore. 😉
  • Of course, you may store any leftovers of the arugula feta strawberry salad in an airtight container in the fridge for 1-2 days.
  • The recipe yields 2 slightly larger side salads or 3-4 smaller portions.

Arugula Strawberry Feta Salad

Ingredients

Salad

  • 9 oz. fresh strawberries
  • 2 oz. arugula
  • 1 oz. lettuce of choice or spring mix
  • 3.5 oz. feta cheese
  • cup chopped walnuts

Dressing

  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tbsp water
  • 1 tsp honey
  • salt, black pepper black pepper

Instructions

  • Thoroughly wash and drain the strawberries and cut them into small, bite-sized pieces.
  • Rinse and drain the leafy greens and tear them into smaller bits. Crumble the feta cheese by hand and coarsely chop the walnuts (if whole).
  • Create the dressing by combining the remaining ingredients using a whisk or little fork.
  • To prepare the salad, mix all the ingredients and serve promptly.
