This recipe combines ripe avocados with cream cheese to create a wonderfully rich and super delicious sauce – even better yet, it takes less than 5 minutes!

All that’s left to do is cook your pasta and serve it with tomatoes! That’s it!

Ideal for a fast, simple dinner solution on especially hectic days. Plus, it tastes divine!

Ingredients

Make this tasty avocado pasta dish with just a few simple ingredients:

  • Avocado: 2 large, ripe avocados or 3 small ones will suffice. Tip: You can spot a ripe avocado by how easily the stem comes off. If it comes off without difficulty, the avocado is ripe.
  • Cream cheese: Plain cream cheese contributes both a beautiful, silky texture and a touch of protein to the sauce. Feeling “adventurous”? Consider trying an herb-infused cream cheese, such as chive/onion, for example.
  • Garlic: Enhances our sauce with an amazingly intense flavor. Garlic may, of course, be omitted altogether if it isn’t a taste you particularly enjoy.
  • Lemon: We’ll need about a tablespoon of freshly squeezed lemon juice.
  • Pasta: Our avocado sauce pairs especially well with pasta. The ideal accompaniment here would be spaghetti or linguine, but any otherpreferred variety willdo.
  • Tomatoes: We’ll be serving the avocado pasta with halved tomatoes. Stick with a small, firm variety – such as cherry tomatoes.

Tip: Garnish with fresh basil leaves to turn this dish into a visual delight!

Instructions

The creamy avocado tomato pasta is incredibly easy to make. The following more detailed instructions will guide you through the process:

Step 1

Let’s get started on the pasta. To cook the pasta, bring salted water to a boil and follow the package directions.

While our pasta is doing its thing, we’ll prepare the avocado sauce:

Cut the avocado in half lengthwise, remove the large pit, and carefully scoop out the flesh using a spoon. Place in a food processor.

(Alternatively, a tall container + an immersion blender will do the trick as well.)

Add the cream cheese, freshly squeezed lemon juice, and the peeled garlic clove. Now purée everything to form a smooth, creamy sauce and liberally season with salt and pepper.

Step 3

Once the pasta is done, drain it thoroughly and stir in the avocado sauce. To combine the two, either use the same pot you used for the pasta or another large bowl. Alternatively, both may also be served separately so that each person can determine how much avocado sauce they like on their pasta.

Serve the pasta topped with tomato halves as garnish.

If you have fresh basil on hand, add a few to further enhance the dish’s visual appeal.

Despite the avocado pasta with tomatoes recipe being fairly straightforward, here are a few additional tips to help guide you along the way:

  • To be on the safe side, buy one extra avocado. Just to be sure, we have enough to create a decent amount of sauce.

Tip on using up leftovers: If you have any leftover avocado, why not try this egg salat with avocado (no mayo) or this avocado feta salad?

  • Feel free to adjust and tweak the amount of avocado flesh and cream cheese. It all depends on how you prefer the sauce in terms of taste and consistency.
  • Another option is to sprinkle some pine nuts on top of your dish. A little added crunch. 😉
  • Do you have any leftover sauce?Serve it as a dipwith a piece of nice, crunchybread.You can also dilute it by adding a little olive oil and use it as a salad dressing.

Storage and Shelf Life

The avocado pasta recipe is essentially designed for immediate consumption. The dish isnt particularly suitable for reheating after the pasta and sauce have been combined.

Any leftovers should be stored separately.Don’t mix all of the pasta and sauce together if you are anticipating having leftovers.

You may store the sauce in an airtight container in the fridge for up to 2 days. Add a splash of lemon juice to it in order to slow down the browning process.

Avocado Sauce:

  • 2 large avocados ripe
  • 3.5 oz cream cheese
  • 1 tbsp lemon juice freshly squeezed
  • 1 garlic clove
  • salt, black pepper
  • cup cherry tomatoes
  • fresh basil leaves optional

Serve with:

  • 8 oz. pasta

Instructions

  • Cook pasta as per package instructions.
  • Meanwhile, carefully scoop out the avocado flesh. Combine with the lemon juice, cream cheese, and garlic clove, and purée everything into a creamy mixture. Season to taste with salt and pepper.
  • Combine the avocado sauce with the pasta and serve garnished with halved cherry tomatoes.

Notes

The recipe yields approximately 3 servings. Using the sauce sparingly (more like a pesto and less like a thicker sauce), you will have enough for 4 helpings. 😉
