My inspiration for this salad came when I last made Spaghetti Bolognese. As you all know, you only require a stick of celery for most sauces, and I was left with almost an entire bunch of celery trying to figure out how to best take advantage of these crunchy sticks.

Then I figured, tasty salads are pretty much always a hit, right? Thus, this incredibly tasty and super easy recipe was „born”.

Celery Apple Walnut Salad

A simple celery salad with apples and walnuts.

Ingredients

Salad

  • 2 celery stalks
  • 2 small apples
  • ¾ cup walnuts
  • 1 bunch of scallions

Dressing

  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tbsp water
  • salt, black pepper

Instructions

  • Chop celery sticks and apples into small, bite-sized pieces.
  • Coarsely chop the walnuts and slice scallions into rings.
  • Combine the remaining ingredients to create your dressing using a fork or whisk.
  • Transfer all ingredients into a bowl, incorporate well, and adjust seasoning if needed.

  • Celery stalk: When picking up produce, make sure it is as fresh and crisp-looking as possible.
  • Apples: I’d suggest selecting a firmer and crunchier apple with a sweeter flavor profile.
  • Walnuts: You might as well pick up chopped walnuts from the store since that will eliminate another processing step, and I’m all about saving time in the kitchen. 😉
  • Scallions: Alternatively, you may substitute chives for scallions. For me, I prefer scallions, as these are more intensely flavorful.

  • The recipe is deliberately kept as simple as possible. It can be tailored to suit your preferences and taste by adding, adjusting, and sprucing it up as you please.
  • To achieve a well-balanced flavor, please follow the measurements specified in my recipe for the apples, walnuts, and scallions. It might seem like a lot, but trust the process. 😉 Also, please dont be stingy when adding lemon juice and seasoning. You’ll thank me later 🙂

  • The celery walnut apple salad makes a great light side dish or starter salad.
  • This is a great way to use up leftover celery sticks when making Bolognese.
  • If the celery sticks are particularly thick, they can be cut lengthwise before being chopped into bite-sized chunks. Otherwise, simply chop them into pieces or half moons.

  • In need of a vegan version of the celery and apple salad with walnuts? Swap the honey required for the dressing for agave syrup or something similar.
  • This salad is best enjoyed freshly made or having rested for only a short while.
  • Any leftovers may be stored in the fridge for up to 2 days. Keep in mind that the salad might start to water down a bit after some time. I would therefore recommend preparing this recipe as close to serving time as possible. Of course, leftovers may still be stored as indicated above.
