Chickpea Tuna Avocado Salad
Ingredients
Salad
- 10 oz chickpeas drained weight
- 10 oz tuna drained weight & in water
- ยฝ English seedless cucumber
- 1 small avocado
- 1 handful argula or more
- 1 small red onion
- scallions
Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice freshly squeezed
- 1 tsp honey
- salt, black pepper
Instructions
- Thoroughly rinse and drain the chickpeas using a strainer. In a separate bowl, combine with the tuna.
- Take your cucumber and avocado and chop them into bite-size pieces. If needed, pluck the arugula into smaller bits. Now, dice your onionโฏand sliceโฏthe scallions intoโฏfineโฏrings. Add everything to the bowl.
- Create the dressing by combining the above specified ingredients using a fork or little whisk. Drizzle the dressing over the salad and combine well. Season to taste once more and adjust if necessary.

- Chickpeas: There are approximately 15.5 ounces of net weight in a typical can of chickpeas.โฏIn covering the recipe, make sure to follow the drained weight indicated on the product.
- Tuna: Iโve used tuna in water for this specific recipe. If you decide to use tuna in oil instead, consider using a little less of it in the dressing. Thatโs completely up to you, however. ๐
- Avocado: The ripeness of the avocado depends on your preference. An unripe avocado tends to have more of a bite to it and be a bit โchunkierโ overall, whereas a perfectly ripe avocado will add more creaminess to your salad.
- Onion: The recipe calls for a red onion, which is the ideal companion to enhance and round out our salad beautifully in terms of flavor and aromatics.
