I love overnight oats. Quickly prepared the night before and ready to be enjoyed in the morning. Time-saving, convenient, and practical. What more does one need to tackle a busy day ahead?

An invigorating breakfast such as this is something I very much appreciate and particularly enjoy during the warmer summer months (even though I’m typically more of an oatmeal/porridge kind of gal).

This recipe calls for oats, Greek yogurt, and fresh berries to create an energy-boosting, flavorful breakfast.

Ingredients

Only 5 simple basic ingredients are required to prepare these heavenly blueberry strawberry overnight oats:

  • Rolled oats: Rolled oats, old fashioned oats, or quick oats will work best for our recipe. Their softer texture will greatly contribute to our desired level of creaminess. If you choose to go with steel-cut oats, you will most likely have to adjust your liquid content.
  • Greek yogurt: Use Greek yogurt with the milkfat percentage of your preference. This ingredient will provide our dish with its lovely creaminess.
  • Coconut flakes: Adding unsweetened coconut flakes (or shredded) will give our recipe a delightful summery flavor and most likely entice you to book your next vacation; preferably at the beach, with lots of coconuts. Do it! 😉
  • Almond butter: The addition of natural, smooth, and unsweetened blanched almond butter will further enhance our dish’s creaminess while simultaneously providing a healthy boost of beneficial fats. If you are having a hard time finding blanched almond butter, simply replace it with regular almond butter. Natural, smooth, and unsweetened as well, though.
  • Milk: The same rules apply as with the Greek yogurt. Choose whatever milkfat percentage floats your boat.
  • Fresh berries: I’ve used blueberries and strawberries for this dish. You may, however, pick any berry you like. Raspberries or blackberries would be a great option as well.

Optional: For those who have a sweet tooth, you may add some honey, agave syrup, or whatever sweetener you prefer.

Please feel free to select any other fruit you like if berries are out of season. Among the many excellent and flavorful alternatives are also mangoes and pineapples. Or, of course, any other local fruit.

Instructions

The strawberry and blueberry overnight oats recipe is incredibly simple and quick to prepare. Here’s what you need to do:

Step 1

We’ll get started on our overnight oats first.

In a bowl, combine oats, Greek yogurt, coconut flakes, almond butter, and milk. Incorporate these ingredients well to create a uniformly smooth mixture. Set aside and let the oats soak up the liquid and swell for a few minutes.

Step 2

While the oats are doing their thing, let’s prepare the berries by thoroughly rinsing and draining them, then carefully patting them dry with a paper towel.

If the berries are “ginormous” and will have you looking like you’ve never been taught any table manners trying to chow down on huge pieces of fruit, feel free to chop them into more bite-sized and socially acceptable pieces.

I chose to go ahead and cut the strawberries into smaller chunks and left the blueberries as is.

Step 3

As our final step, let’s combine the overnight oats with the berries:

  • Transfer your oat-yogurt mix into an airtight container, then spread some berries on top. Mason jars with a clamp lid or screw top lid would work best. But pretty much any container with an airtight lid will do.
  • Tightly seal the container and place it in the fridge overnight or for at least several hours.
  • Grab your breakfast from the fridge in the morning and ENJOY!

Alternatively, you may wait until the morning to add the fresh berries.

Another option would be to gently fold the fruit directly into your oat mix. OR, if you’re feeling mighty creative, and especially if you are using glass containers, create a fruity layer in the middle. A layer of oats on the bottom, then a layer of fruits, and then another layer of oats on top. Just to be sure we’re on the same page. 😉

Ingredients

  • ½ cup rolled oats
  • 1/3 cup Greek yogurt
  • 2 tbsp coconut flakes
  • 2 tsp almond butter
  • ¼ cup milk
  • ¼ cup fresh blueberries
  • ¼ cup fresh strawberries

Instructions

  • Combine oats, yogurt, coconut flakes, almond butter, and milk and set aside to soak.
  • In the meantime, rinse, drain, and let berries dry off. Chop into smaller bits if needed.
  • Transfer oat mixture to an airtight container and spread berries on top. Place in fridge overnight and enjoy the following morning.

Alternatively, you may also add the berries to the bottom of the container, as a layer in between, or fold them directly into the oat mixture.
